Fresh juicy peaches and blueberries make this a deliciously sweet yet healthy breakfast treat. With only 15 minutes of prep time, this recipe is a keeper.
– Eggs – Milk – Brown sugar – Vanilla extract – Oats
– Cinnamon – Salt – Peaches – Blueberries
Preheat oven to 350°F. Spray a square baking dish with cooking spray. In a bowl whisk the eggs, milk, brown sugar and vanilla. In a separate bowl, combine oats, cinnamon and salt.
Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins, if using. Add to the prepared baking dish and sprinkle blueberries over top.
Bake in the preheated oven for 30 minutes, or until it is uniformly golden brown on the top.
Let the oatmeal cool for 10 minutes and slice into squares!
