    Peach Baked Oatmeal Recipe With Blueberries

    This peach baked oatmeal recipe with blueberries makes a delicious breakfast! Fresh juicy peaches, blueberries and delicious seasonings make this a deliciously sweet yet healthy breakfast treat. With only 15 minutes of prep time, this breakfast recipe is a keeper.

    Why I Love This Recipe

    Peaches are one of my favorite juicy fruits of all time, but that isn't the only reason I'm in love with this delicious recipe. Here are a few other reasons:

    • This easy breakfast is such a healthy way to enjoy breakfast!
    • This is a favorite way to use sweet peaches during peach season.
    • Such a delicious way to enjoy summer peaches. Juicy peaches make everything taste more delicious.
    • Only 15 minutes of prep (tops!) and 30 minutes in the oven, this is a great make-ahead breakfast.
    • Think outside of the breakfast box! Reheat a slice for dessert and serve alongside a scoop of vanilla ice cream.

    Recipe Ingredients

    Milk - Use any kind of milk for this recipe! Skim, 1%, 2%, whole, oat milk, almond milk, coconut milk or soy milk all work great.

    Brown sugar - Light brown sugar or dark brown sugar can be used interchangeably. Dark brown will give you a deeper flavor.

    Vanilla extract - Vanilla is a great go-to flavor addition, but any extract will work here. Almond extract is a delicious choice, as well!

    Old fashioned rolled oats - Regular old-fashioned oats work great! Grab a gluten-free variety to make this a gluten free breakfast.

    Quick oats may be used, but cook time will be shorter. Expect them to finish cooking within 5-7 minutes.

    Cinnamon - Don't limit yourself to cinnamon! If you want to dress it up a bit more, consider using a sprinkling of warm spices of your choice such as allspice, apple pie spice, pumpkin pie spice or nutmeg!

    Peaches - If they are in season, use fresh peaches! If not, canned or frozen peaches will work, too.

    Blueberries - Fresh or frozen blueberries will both be delicious.

    How to Make Baked Peach Oatmeal

    Step 1

    Preheat oven to 350 degrees F and spray a 8x8 square baking dish with cooking spray. In a large mixing bowl whisk together the eggs, milk, brown sugar and vanilla extract. In a separate bowl, combine oats, cinnamon, baking powder and salt.

    Step 2

    Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the peaches. Add the mixture to the prepared baking dish and spread evenly. Sprinkle the blueberries over the top.

    Step 3

    Bake in the preheated oven for 30 minutes, or until it is uniformly golden brown on the top.

    Let the oatmeal cool for 10 minutes and slice into squares.

    Recipe Notes

    • If using canned peaches, cut peach slices into bite-sized pieces before adding to the mixture.
    • Add 1-2 tablespoons of protein powder to boost the protein in the recipe.
    • Give the mixture a bit of a creamy texture by adding up to 1/2 cup of Greek yogurt.
    • Make a double batch and freeze one for later!
    • Chia seeds are a great addition for adding a little crunch!
    • Make this dish on Monday and enjoy it for breakfast the rest of the week.
    • A drizzle of honey or pure maple syrup is all you need to send this over the edge into greatness.

    How To Store Baked Oatmeal

    Cover the baking dish with plastic wrap or aluminum foil (or transfer to an airtight container) and place in the refrigerator for up to 5 days for best rest results.

    How To Reheat Oatmeal

    Oatmeal can be reheated in the microwave or on the stovetop. To reheat in the microwave, place individual portions in a microwave-safe bowl and cover loosely with a paper towel. Heat for one minute, stir, and heat in 30-second intervals after until heated through.

    To reheat on the stovetop, add oatmeal to a small saucepan. Add a splash of milk or water and heat over medium heat for 5 minutes or until warmed through. Stir occasionally to avoid scorching.

    When Is The Best Time To Eat Oatmeal

    Oatmeal is rich in fiber, making it the perfect morning food. It may help to boost your metabolism for the day and increase energy.

    This doesn't mean that morning is the only time to consume oatmeal. It can act as a great lunch or snack throughout the day, as well.
