Easy to prep and out of the oven in 25 minutes, this cinnamon roll baked oatmeal is the healthy-ish version of one of your favorite indulgent breakfast treats!
– Eggs – Milk – Maple syrup – Brown sugar – Vanilla extract – Oats – Cinnamon
– Baking powder – Salt – Raisins – Simple icing
Preheat oven to 350°F. Spray a square baking dish with cooking spray. In a bowl whisk the eggs, milk, maple syrup, brown sugar and vanilla. In a separate bowl, combine oats, cinnamon and baking powder.
Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins, if using. Add the mixture to the prepared baking pan and spread evenly.
Bake in the preheated oven for 25 minutes, or until it is uniformly golden brown on the top.
Make the icing while the oatmeal is baking. Whisk the powdered sugar and 2 Tbsp milk in a small bowl until icing has formed.
Let the oatmeal cool for 10 minutes and slice into squares. Drizzle with icing and serve immediately!
