Easy to prep and out of the oven in 25 minutes, this cinnamon roll baked oatmeal is a breakfast delight! Not a single morsel will go to waste. It's the healthy-ish version of one of your favorite indulgent breakfast treats!
Why I Love This Recipe
The delicious cinnamon roll and I have a long-standing love affair. They are the perfect food, in my opinion. I'd eat one every single day if I didn't care about the state of my body. Cinnamon roll oatmeal is a great alternative for these reasons:
- This is your opportunity to enjoy a healthy cinnamon roll with a little bit of indulgence.
- It's such an easy breakfast, with minimal prep time and it is easy to make ahead and bake later. Pop it into the oven whenever you're ready to enjoy!
- When stored properly in the fridge, it retains freshness well and can be enjoyed for a few days after initial baking. It reheats well, so you can enjoy it the rest of the week (or as long as it lasts!).
- Add your favorite cinnamon roll ingredients or variations to change it up.
- You really cannot mess this recipe up. Combine ingredients, stir, bake, enjoy!
- It's the perfect breakfast for guests or to serve to your family any day of the week.
- If you love baked oatmeal, this might become your favorite version.
Recipe Ingredients
Milk - Use any variety of milk for this recipe, including skim, 1%, whole, oat milk, almond milk, heavy cream or soy milk.
Maple syrup - Pure maple syrup is the tastiest option for this recipe. Feel free to swap out some or all of the maple syrup with honey or another sweetener.
Brown sugar - Light brown sugar or dark brown sugar or granulated sugar work great interchangeably. For an even healthier dish, omit sugar altogether and replace with equal amounts of honey, agave or additional maple syrup.
Old fashioned oats - This variety of rolled oats is my go-to, but steel cut oats will work great, too. If using steel cut oats, increase the cook time to 35-40 minutes.
Cinnamon - Boost the cinnamon flavor by doubling the amount used in the recipe.
Raisins - Raisins are optional, but add such a nice flavor and texture. Consider adding other dried fruits, if desired.
Icing - The icing is optional, but will provide a true-to-life cinnamon roll experience.
Prep Cinnamon Roll Baked Oatmeal Ahead of Time
- Combine the dry ingredients (oats, cinnamon, baking powder and salt) and store in a sealed bag until ready to prepare.
- Make the icing while the oatmeal is in the oven.
How To Make Cinnamon Roll Baked Oatmeal
Step 1
Preheat oven to 350 degrees F and spray a 8x8 square baking dish with cooking spray. In a large bowl whisk together the eggs, 1 1/2 cups milk, maple syrup, brown sugar and vanilla extract. In a separate bowl, combine oats, cinnamon and baking powder.
Step 2
Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins, if using. Add the mixture to the prepared baking pan and spread evenly.
Bake in the preheated oven for 25 minutes, or until it is uniformly golden brown on the top.
Step 3
Make the icing while the oatmeal is baking. Whisk the powdered sugar and 2 Tbsp milk in a small bowl until icing has formed. If the icing is too thick, add milk 1 tablespoon at a time. If it is too thin, add powdered sugar 1 tablespoon at a time.
Let the oatmeal cool for 10 minutes and slice into squares. Drizzle with icing and serve immediately!
Recipe Notes
- In place of raisins, consider using dried cranberries, cherries, fresh berries or chopped apples or peaches. Do not exceed more than 1/2 cup of extras and pat any juicy fruit you might be adding with paper towels to get rid of excess moisture.
- Quick oats are not recommended for this recipe, as they will cook much differently than old-fashioned oats.
- Use a piping bag or simply make a small cut in the corner of a ziplog bag to create a perfect cinnamon swirl on top.
- Pump up the protein in the recipe by adding a tablespoon of protein powder to the dry ingredients.
- For a gluten free breakfast, use gluten-free oats (be sure to read ingredients on packaging).
Cinnamon Roll Toppings
Top this oatmeal cinnamon roll (or any cinnamon roll) with any of these delicious toppings:
- Simple icing
- Maple syrup
- Cream cheese frosting
- Chopped walnuts or pecans
- Streusel topping
- Any fruit sauce or fresh fruit
- Caramel sauce
- Creamy almond butter or peanut butter
- Chocolate chips or chopped chocolate
How To Reheat Oatmeal
Whether you are reheating a bowl of oatmeal or a piece of baked oats, place in/on a microwave-safe dish. Add a splash of milk or water, if reheating a bowl of oatmeal. Cover loosely with a paper towel.
Microwave on high heat for 1 minute and check that it is warmed through. Serve immediately!
How Long Does Cooked Oatmeal Last
Prepared oatmeal will stay fresh in the fresh for up to 4 days when stores in an airtight container in the fridge. When stored in the freezer it should be used within 4 months for best results.
