Ingredients

  • 3 ripe bananas mashed
  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup chocolate chips optional

Instructions

  • Preheat the oven to 350 degrees. Line an 8x8 baking dish with parchment paper and set aside.
  • In a large mixing bowl, mash the bananas using fork tines. Add the peanut butter and oatmeal to the bowl. Using a wooden spoon, stir until well combined.
  • Transfer the batter to the prepared baking dish and spread evenly using a rubber spatula. Sprinkle with chocolate chips (if using). Bake for 20 minutes in the preheated oven, or until golden brown.
  • Let cool for 10 minutes before cutting in squares and serving.

Notes

  • Use ripe bananas for the sweetest flavor and the best texture.
  • Regular creamy peanut butter works best. If using natural peanut butter, stir in an extra tablespoon or two of rolled oats if the mixture seems too wet.
  • Old-fashioned rolled oats create the best texture. Quick oats will work but produce softer bars. I don't recommend steel-cut oats or instant oatmeal.
  • Let the bars cool for at least 10 minutes before slicing so they hold together well.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
