- 13.25 oz spice cake mix
- 15 oz pumpkin puree
- 2 eggs
Preheat oven to 350 degrees F. Place cupcake liners in a muffin tin and set aside.
In a medium mixing bowl, combine cake mix, pumpkin puree and eggs. Stir until free of lumps. Add 1/4 cup of the batter to each liner.
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. Serve warm with butter!
- The batter can stick to paper liners! Squirt a small amount of cooking spray inside the liners before adding the batter.
- Spruce these up by adding a sprinkling of turbinado sugar to the top of the muffins before baking.
- These muffins hold the shape you leave the batter in. Smooth it out with the back of a spoon before baking to achieve a uniform shape.
- You can also use an ice cream scoop or a cookie scoop to fill the liners with.
