Avocado Toast with Roasted Tomato Recipe
Avocado toast with roasted tomato is one of my favorite ways to start the day. It’s a super simple and delicious breakfast option that only requires a few common ingredients but is packed with flavor, healthy fats and other health benefits!

- 4 slices tomato
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 avocado peeled and pitted
- 1/2 tsp lemon juice
- pinch sea salt
- 2 slices sourdough bread toasted
- 2 tbsp fresh herbs (chives, cilantro or parsley) finely chopped
Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
Arrange the tomato slices on the parchment in a single layer. Drizzle with olive oil and sprinkle with salt and pepper.
Bake in the preheated oven for 20 minutes, or until crispy around edges. Remove from the oven and let cool.
In a small bowl, mash the avocado with fork tines. Add lemon juice and salt. Mix well. Spread half of the avocado mixture on each slice of toasted bread.
Divide the roasted tomato slices between the avocado toast and top with chives.
- Black pepper, cayenne pepper, or even smoked paprika can be added to the avocado mixture for an added kick.
- When spreading the mashed avocado over the bread slices, place a heaping pile in the center of the piece of bread and spread from the center all the way to the outer edges.
- If you have leftover avocado tomato toast, add cheese (optional) and turn it into a sandwich.
- Once an avocado has been opened, it’s only good for a few days. See tips below on how to keep avocado fresh longer.
- You can make this recipe gluten free simply by subbing your favorite gluten free bread.
