Avocado Toast with Roasted Tomato Recipe

Avocado toast with roasted tomato is one of my favorite ways to start the day. It’s a super simple and delicious breakfast option that only requires a few common ingredients but is packed with flavor, healthy fats and other health benefits!

Ingredients

  • 4 slices tomato
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 avocado peeled and pitted
  • 1/2 tsp lemon juice
  • pinch sea salt
  • 2 slices sourdough bread toasted
  • 2 tbsp fresh herbs (chives, cilantro or parsley) finely chopped

Instructions

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Arrange the tomato slices on the parchment in a single layer. Drizzle with olive oil and sprinkle with salt and pepper.
  • Bake in the preheated oven for 20 minutes, or until crispy around edges. Remove from the oven and let cool.
  • In a small bowl, mash the avocado with fork tines. Add lemon juice and salt. Mix well. Spread half of the avocado mixture on each slice of toasted bread.
  • Divide the roasted tomato slices between the avocado toast and top with chives.

Notes

  • Black pepper, cayenne pepper, or even smoked paprika can be added to the avocado mixture for an added kick.
  • When spreading the mashed avocado over the bread slices, place a heaping pile in the center of the piece of bread and spread from the center all the way to the outer edges.
  • If you have leftover avocado tomato toast, add cheese (optional) and turn it into a sandwich.

  • You can make this recipe gluten free simply by subbing your favorite gluten free bread.
