Banana Applesauce Pancakes Recipe - No milk, no eggs!

No milk or eggs are required for this super easy banana applesauce pancakes recipe! Only 7 ingredients and a few minutes of your time are needed to make this delicious hot breakfast. Perfect quick and easy way to start the day!

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 bananas ripe, mashed
  • 1 cup applesauce
  • 1 tsp vanilla extract

Instructions

  • In a medium bowl, combine flour, sugar, baking powder and salt. Mix well.
  • In a large bowl, combine the mashed banana, applesauce and vanilla extract. Stir until smooth. Gradually add the flour mixture, stirring until batter is free of lumps.
  • Place a skillet over medium-low heat and spray generously with cooking spray. Add the batter to the hot skillet in 1/4-cup increments. Use the back of a spoon to flatten the batter (it will be thick) and shape it into a circle. Cook for about 1 minute per side or until batter has cooked all the way through.
  • Repeat until the batter is gone, spraying the skillet with cooking spray before each new batch. Spread butter over warm pancakes and pour syrup over the tops.

Notes

  • The pancake batter will be thick, so spreading it around with the back of a spoon will be necessary once you add it to the hot skillet.
  • When you cut into these delicious pancakes, don't be alarmed by the moist insides. It's the bananas! The texture will look different from pancakes made with eggs, milk and butter, but rest assured they're fully cooked.
  • Go low and slow with the heat! I set my burner on the low end of medium-low in order to keep the cakes from burning.
  • Store leftover pancakes in an airtight container and store in the fridge for up to 5 days. Reheat in the microwave as needed.
  • Create small pancakes if you'd like by using 2 tablespoons of batter per cake.
