- 3 tbsp butter
- 2 apples peeled, cored and chopped
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 tsp cornstarch + 2 tsp water to create a slurry
Melt butter in a saucepan over medium heat. Add apples, brown sugar, cinnamon and vanilla extract to the melted butter.
Mix the cornstarch and water and stir until free of lumps, creating a slurry.
Cook until apples are soft, stirring often, for approximately 5 minutes. Stir in the cornstarch slurry and cook for an additional 1-2 minutes.
Remove from heat and drizzle over your favorite pancakes!
- The longer you cook the mixture on the stove top, the more of a caramelized apple topping you'll get. Be sure to stir constantly and watch for scorching if you cook past the recommended 10 minutes.
- If you are peeling, coring and chopping the apples by hand you may want to add them to a bowl of cool water with lemon juice to keep them from turning brown.
