Pancake in a Mug Recipe

This pancake in a mug recipe is ready to eat in less than 5 minutes from start to finish. Add extras of your choice to customize it! Prep the dry ingredients ahead of time so kids can easily make it themselves on busy mornings.

Ingredients

  • 1/4 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1/2 tsp baking powder
  • 3 tbsp milk
  • 1 tbsp vegetable oil or canola oil
  • 1/2 tsp vanilla extract
  • 1/4 cup fresh blueberries or chocolate chips or other berries

Instructions

  • In a microwave safe mug combine flour, sugar and baking powder, milk and vanilla. Fold in chocolate chips or blueberries, if using. Microwave for 60-90 seconds.
  • If pancake isn't cooked all the way through in the top center, place back in the microwave and cook in 15-second increments until it is done.
  • Remove from microwave and top with desired toppings.

Notes

  • Use a wide microwavable mug when possible to make this single serving pancake. It will cook more evenly, providing less of a chance of the middle being gooey.
  • Keep in mind that cook time may vary depending on the wattage of your microwave. If you remove the mug from the microwave and notice that it hasn't cooked all the way through, no biggie! Place the coffee cup back in the micro and cook in 15-second intervals until it cooks through.
  • Add a dash of cinnamon to the dry ingredients for a fun flavor boost!
  • When you add 1/2 teaspoon of lemon zest to the batter, you'll taste a burst of freshness.
  • Add up to 1 tablespoon of protein powder to the dry ingredients for a protein boost.
