Peach Baked Oatmeal Recipe With Blueberries

Ingredients

  • 2 eggs
  • 2 cups milk
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups old fashioned rolled oats
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 peaches peeled, pitted and chopped
  • 1 cup blueberries

Instructions

  • Preheat oven to 350 degrees F and spray a 8x8 square baking dish with cooking spray. In a large bowl whisk together the eggs, milk, brown sugar and vanilla extract. In a separate bowl, combine oats, cinnamon and salt.
  • Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the peaches. Add the mixture to the prepared baking pan and spread evenly. Sprinkle the blueberries over the top.
  • Bake in the preheated oven for 30 minutes, or until it is uniformly golden brown on the top.
  • Let the oatmeal cool for 10 minutes and slice into squares.

Notes

  • If using canned peaches, cut peach slices into bite-sized pieces before adding to the mixture.
  • Add 1-2 tablespoons of protein powder to boost the protein in the recipe.
  • Give the mixture a bit of a creamy texture by adding up to 1/2 cup of Greek yogurt.
  • Make a double batch and freeze one for later!
  • Chia seeds are a great addition for adding a little crunch!
  • Make this dish on Monday and enjoy it for breakfast the rest of the week.
  • A drizzle of honey or pure maple syrup is all you need to send this over the edge into greatness.
