Pumpkin Granola Bars Recipe

- 2 cups old fashioned rolled oats
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1/4 cup honey
- 1 tsp vanilla extract
- 3/4 cup chocolate chips
Preheat oven to 350 degrees F. Line an 8x8 baking dish with parchment paper and set aside.
In a large bowl, combine the oats, pumpkin pie spice and salt.
In a medium bowl, whisk or stir the brown sugar, pumpkin puree, honey and vanilla extract.
Gradually add the dry ingredients to the wet ingredients and stir until combined. Stir in the chocolate chips.
Pour the mixture into the prepared pan. Use a rubber spatula to press the mixture in a single layer, making sure to pack in the corners.
Bake in the preheated oven for 20-25 minutes, or until the bars are golden brown. Let cool and lift the parchment paper from the pan and onto a cutting board. Cut into 3x1-inch strips.
Store in an airtight container in the fridge for up to 7 days.
