- 4 eggs
- 2 tbsp water
- 3 tbsp olive oil divided
- 1/4 tsp salt
Crack the eggs into a small bowl. Add the water and whisk until mixture is smooth. Add 2 tablespoons of the olive oil and whisk for 30 seconds.
Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Pour the scrambled egg mixture into the hot skillet, sprinkle salt evenly over top and stir with a spatula.
Once the eggs are cooked and set and transfer them to a serving plate along with toppings of choice.
