- 1 lb bacon cooked and chopped
- 12 eggs
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese divided
- 32 oz frozen tater tots
Preheat oven to 350 degrees F and coat a 9×13 baking dish with cooking spray. In a large bowl, beat together eggs, milk and 1 cup of the cheese. Add the cooked bacon and mix well.
Pour contents into prepared the baking dish. Drop in the tater tots. (If prepping the night before, leave out the tater tots until just before baking.)
Bake uncovered in the preheated oven for 50 minutes. Sprinkle with the remaining 1 cup of cheese and bake an additional 10 minutes, or until cheese is melted and eggs are cooked through.
Let sit for 10 minutes before serving.
- There’s so much room for add-ins and flavor boosts! Use what is in your fridge. (See some of my best suggestions below.)
- If you are preparing the casserole ingredients in advance to be baked the next morning, do not add the tater tots until you're ready to bake it.
- I like to use to thick cut slices of bacon, but any bacon will work, You can even use chopped ham or sausage pieces.
