Everyone in my family loves a big breakfast, but I can sometimes have a hard time pulling that off. Not anymore! This easy 5-Ingredient Breakfast Casserole may just be the easiest breakfast outside of pouring a bowl of cereal. And it is so much more satisfying.
Packed with simple ingredients you likely have in your kitchen now, this egg breakfast casserole has all your favorite breakfast flavors, comes together in mere minutes and can satisfy you all day long. Plus, you can easily swap out some of the ingredients or add all sorts of extras you know your family loves.
But this easy casserole isn’t just a simple and complete meal for weekend breakfast, it’s also fancy enough for overnight guests, holiday brunches, or Christmas morning!
Easy Breakfast Casserole Recipe Ingredients
This easy recipe only calls for a handful of basic ingredients you probably have in your kitchen right now!
Bacon - Add bacon after it has been cooked and chopped. You can also replace it with any breakfast meat of your choice, including sausage or ham.
Eggs
Milk - Any variety
Cheese - Use any shredded cheese that melts well, including cheddar, mozzarella, colby-jack, etc.
Tater tots - Drop the tots directly into the casserole while frozen. No need to thaw! These can also be replaced with frozen hash browns or patties.
How to Make 5 Ingredient Breakfast Casserole
This is a shortened version of the step by step instructions that can be found in the recipe card at the bottom of this post.
Step 1
Preheat oven and coat a 9×13 casserole dish with cooking spray.
Step 2
In a large bowl, whisk eggs, milk and 1 cup of the cheese. Add the cooked bacon and mix to combine.
Pour the contents into the prepared baking dish and drop in the tater tots.
Step 3
Bake the casserole uncovered for 50 minutes.
Sprinkle with the remaining cheese and bake an additional 10 minutes, or until cheese is melted and eggs are fully cooked.
How to Prep 5 Ingredient Breakfast Casserole Ahead of Time
- The best way to prep ahead is to make the casserole in its entirety, allow it to cool, and store it in the fridge covered with plastic wrap or an airtight lid.
- When ready to serve, warm the casserole in the oven for 15 minutes at 300 degrees F or until warmed through.
OR - Make the egg mixture and pour it into the baking dish (don’t add tots yet!), cover the baking dish and refrigerate.
- When you are ready to bake the casserole, add the frozen tater tots, and bake as directed according to the recipe instructions.

Extra cheese - Cheddar cheese is a great go-to but try this with all sorts of cheese! Pepper jack and Monterey Jack are a couple of my favorites.
Seasonings - Paprika, seasoned salt, cayenne pepper, salt and pepper.
Toppings - Hot sauce, avocado slices, sour cream, salsa, sliced green onion.

Reheat this breakfast casserole at 325-350F in the oven for about 10-15 minutes or until warmed through to the center.
You can also microwave slices of this casserole on medium-high heat for 2-3 minutes until hot.

Ingredients
- 1 lb bacon cooked and chopped
- 12 eggs
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese divided
- 32 oz frozen tater tots
Instructions
