Ingredients

  • 1/2 cup butter softened
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups pancake mix
  • 3 ripe bananas mashed

Instructions

  • Preheat oven to 350 degrees F. Coat a 9x5-inch loaf pan with cooking spray and set aside.
  • In a large bowl or stand mixer, combine the butter, brown sugar, eggs and vanilla. Beat on medium speed until mixture is creamy.
  • Add the pancake mix and stir until fully incorporated. Fold in the mashed bananas and pour into the prepared loaf pan.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let sit for 10 minutes before cutting into slices.

Notes

  • Use your favorite pancake mix.
  • Over-ripe bananas work best.
  • Don't forget add-ins like chopped nuts, chocolate chips, fresh banana slices, etc
  • Don’t over mix the batter when combining the ingredients. Especially if using a hand mixer.
  • Allow the egg to sit at room temperature a bit for better combining.
  • You can use flax eggs instead of the regular eggs if you are allergic.
  • For vegan banana bread, use a dairy free butter and egg replacement.
  • For a gluten-free option try your favorite GF pancake mixes. 
  • You can sub refined coconut oil for the butter.
  • Cool the bread on a wire rack before slicing.
