    If you’ve read my blog for any amount of time, you know I love, love, love banana bread. If you’re new here, Hi, I’m Megan, and I’m addicted to banana bread. Seriously, I have so many different banana bread recipes it’s almost, well, bananas.

    But this Easy Banana Bread Made with Pancake Mix, is my latest obsession. The use of packaged box or bag of pancake mix makes for an easy, tasty, and quick bread. My family devours multiple loaves of this a week!

    And this delicious banana bread recipe is so simple! You probably have all the ingredients on hand in your kitchen right now! It’s great for holiday parties, brunches, or just for an easy weekend breakfast with minimal effort.

    Pancake Mix Banana Bread Ingredients

    This banana bread with pancake mix recipe uses simple ingredients you probably have in your kitchen already!

    Butter - Salted or unsalted will both work.

    Brown sugar - Light or dark.

    Eggs - Room temperature is best for binding.

    Vanilla extract - Use quality extracts for the best flavor.

    Pancake mix - Any variety will work great! This ingredient simplifies prep and takes the place of flour, leavening agents and spices.

    Large bananas - Ripe and mashed.

    How To Make Homemade Banana Bread from Pancake Mix

    Follow these simple directions for the best banana bread ever!

    Step 1

    Preheat the oven to 350 degrees F. Coat a 9x5-inch loaf pan with cooking spray and set aside.

    Step 2

    In a large bowl or stand mixer, combine the butter, brown sugar, eggs and vanilla. Beat on medium speed until mixture is creamy. 

    Step 3

    Add the pancake mix to the wet ingredients and stir until fully incorporated. Fold in the mashed bananas and pour batter into the prepared loaf pan.

    Step 4

    Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

    Let sit for 10 minutes before cutting into slices.

    How to Prep Banana Bread from Pancake Mix Ahead of Time

    • The best way to prepare this recipe ahead is to make the bread and store until ready to serve. Reheat if you want to serve warm.

    • You can make the batter, refrigerate, and bake later (let sit at room temp for 20 minutes first).

    Recipe Notes & Tips For The Most Delicious Banana Bread

    • Use your favorite pancake mix.
    • Over-ripe bananas work best.
    • Don't forget add-ins like chopped nuts, chocolate chips, fresh banana slices, etc
    • Don’t over mix the batter when combining the ingredients. Especially if using a hand mixer.
    • Allow the egg to sit at room temperature a bit for better combining.
    • You can use flax eggs instead of the regular eggs if you are allergic.
    • For vegan banana bread, use a dairy free butter and egg replacement.
    • For a gluten-free option try your favorite GF pancake mixes. 
    • You can sub refined coconut oil for the butter.
    • Cool the bread on a wire rack before slicing.

    Flour is just ground wheat. Plain and simple. Packaged complete pancake mix is basically flour with baking powder, sugar, and salt added to it. 

    How To Tell When Banana Bread Is Done

    Banana bread is done baking when the top of the bread has turned a nice golden brown and the center is completely baked through. You can use the old, trusty toothpick method or insert an oven thermometer. The bread is finished when the  internal temp is between 200-205°F.

    How Long Should Banana Bread Cool

    • Banana bread should cool at least 20-30 minutes before slicing. 1 full hour is best.
    • Allow the banana bread to rest in the pan for 10-15 minutes after removing it from the oven.
    • Take the loaf from the bread pan and let it finish cooling on a wire rack.

    How to Serve Banana Bread

    • Eat slices of banana bread with loads of soft butter or peanut butter for breakfast or as a snack. 
    • Fry up slices like you would ordinary pancakes and top with butter and a little maple syrup.
    • Turn it into something like a Monte Cristo or banana bread French toast. A wonderful “wow” breakfast for holiday guests.
    • You can also use this beautiful banana bread as the base of a sundae with some ice cream and chocolate sauce or as a banana bread strawberry shortcake with fresh berries and loads of whipped cream.

    Best Way to Store Banana Bread

    Allow the banana bread to cool before storing to avoid any condensation forming.

    Store fresh banana bread in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator.

    How Long Does Banana Bread Last Unrefrigerated

    Leftover banana bread will be good for 3-5 days stored at room temp in an airtight container.

    How To Freeze Banana Bread    

    You can also freeze leftover banana bread for up to 1 year when stored properly.

    Slice the cooled loaf and place a piece of parchment paper between each slice then wrap them in plastic wrap and place in a freezer bag. That way you can just grab the number of slices needed from the bag. 

    Allow the frozen banana bread slices to thaw at room temperature or in the refrigerator, or reheat the slices in the toaster.
