Breakfast Rice Bowl Recipe

- 1 bag success jasmine rice
- 4 eggs
- 2 tbsp olive oil
- 8 oz mushrooms sliced
- 2 cups baby spinach
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 avocado pitted, peeled and sliced
- 1 tbsp hot sauce optional
Prepare Success rice according to package instructions and set aside.
Crack the eggs into a medium bowl and add a splash of water. Whisk until beaten.
Heat a large skillet over medium medium heat and spray with cooking spray. Pour the egg mixture into the hot skillet and stir until cooked through and “scrambled.” Transfer the eggs to a plate and cover to keep warm.
Add the olive oil to the skillet and allow to get hot (2-3 minutes). Add the mushrooms, spinach, salt and pepper and cover. Cook, stirring occasionally, until the mushrooms are soft and spinach is wilted. Add the cooked rice and scrambled eggs to the skillet and stir until everything is warmed through, approximately 3 minutes.
Divide between two serving dishes and top with avocado slices and hot sauce (if desired).
