Breakfast Egg Rice Bowl Ingredients
This rice bowl recipe uses simple, fresh ingredients. Feel free to adjust these to make your own variety of breakfast rice.
Success Jasmine Rice - Use any rice of your choice. I like to use the Success boil in bag rice because it’s already portioned and always comes out great.
Eggs - Personally love scrambled eggs for breakfast bowls, but feel free to cook them any way you like. Fried, hard-boiled, etc.
Olive oil - Avocado oil is a good replacement.
Mushrooms and spinach - Can be substituted for any veggies of choice. See my suggestions below.
Salt and pepper - Simple but delicious seasoning combo, but definitely add other seasonings if desired (paprika, cayenne pepper, etc).
Avocado - Nothing tops a good breakfast rice bowl like a freshly sliced avocado!
Hot sauce - Use sriracha or your favorite brand of hot sauce.
How to Make Breakfast Bowls with Rice
This delicious savory breakfast is so easy to make in just a few simple steps..
Step 1
Prepare Success rice according to package instructions and set aside.
Step 2
Crack the eggs into a medium bowl and add a splash of water. Whisk until beaten.
Step 3
Heat a large skillet over medium medium heat and spray with cooking spray. Pour the egg mixture into the hot skillet and stir until cooked through and “scrambled.” Transfer the eggs to a plate and cover to keep warm.
Step 4
Add the olive oil to the skillet and let it get hot (2-3 minutes). Add the mushrooms, spinach, salt and pepper and cover. Cook, stirring occasionally, until the mushrooms are soft and spinach is wilted.
Add the cooked rice and scrambled eggs to the skillet and stir until everything is warmed through, approximately 3 minutes.
To Serve
Divide the finished breakfast rice between two serving dishes and top with avocado slices and hot sauce (if desired).
