Brioche French Toast Casserole Recipe
This delicious baked brioche French toast casserole is sure to be as big a hit with your family as it is with mine. Rich, tender brioche is baked in a sweet egg custard batter to golden brown perfection. Top this breakfast bake with the traditional butter and maple syrup or try some fresh fruit or even a caramel sauce as a decadent dessert option.

Streusel Topping
- 4 tbsp butter melted
- 2/3 cup all-purpose flour
- 2/3 cup brown sugar
French Toast Casserole
- 1 loaf Brioche bread Cut or broken into bite-size pieces
- 8 eggs beaten
- 2 cups milk
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
Prepare the streusel topping. In a small bowl, combine the butter, flour and 2/3 cup brown sugar. Mix with a fork until crumbly.
Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside.
Spread bread pieces into the bottom of the prepared pan. In a medium bowl, combine the eggs, milk, vanilla extract and brown sugar. Mix well and pour evenly over the bread. Sprinkle the streusel crumbles over top.
Bake in the preheated oven for 40 minutes. Serve warm with butter and syrup!
- Brioche is my favorite type of bread for this, but any type of bread will work as long as it's sturdy. See below for a few options.
- You can use half whole milk and half heavy cream for an even more decadent result.
