Brioche French Toast Casserole Recipe

This delicious baked brioche French toast casserole is sure to be as big a hit with your family as it is with mine. Rich, tender brioche is baked in a sweet egg custard batter to golden brown perfection. Top this breakfast bake with the traditional butter and maple syrup or try some fresh fruit or even a caramel sauce as a decadent dessert option.

Ingredients

Streusel Topping

  • 4 tbsp butter melted
  • 2/3 cup all-purpose flour
  • 2/3 cup brown sugar

French Toast Casserole

  • 1 loaf Brioche bread Cut or broken into bite-size pieces
  • 8 eggs beaten
  • 2 cups milk
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  • Prepare the streusel topping. In a small bowl, combine the butter, flour and 2/3 cup brown sugar. Mix with a fork until crumbly.
  • Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside.
  • Spread bread pieces into the bottom of the prepared pan. In a medium bowl, combine the eggs, milk, vanilla extract and brown sugar. Mix well and pour evenly over the bread. Sprinkle the streusel crumbles over top.
  • Bake in the preheated oven for 40 minutes. Serve warm with butter and syrup!

Notes

  • Brioche is my favorite type of bread for this, but any type of  bread will work as long as it's sturdy. See below for a few options.
  • You can use half whole milk and half heavy cream for an even more decadent result.
