    Brioche French Toast Casserole Recipe

    This delicious baked brioche French toast casserole is sure to be as big a hit with your family as it is with mine. Rich, tender brioche is baked in a sweet egg custard batter to golden brown perfection. Top this breakfast bake with the traditional butter and maple syrup or try some fresh fruit or even a caramel sauce as a decadent dessert option.

    Why I Love This Recipe

    My whole family loves French toast. And so do I, but this brioche French toast casserole changed the way I think about it. Rich and sweet brioche baked in a brown sugar custard mixture to golden perfection.

    This delicious brioche French toast bake is so much simpler and faster than making regular French toast. And far less messy with no frying pan needed! It can even be made ahead for the next day or easy breakfast throughout the week.

    This easy breakfast recipe is not only simple to make, but the results are as delicious as they are fancy. Brioche french toast casserole bake is the perfect recipe for more than just weekend mornings or special occasions.

    Recipe Ingredients

    This easy french toast bake uses basic ingredients you probably have on hand, except for maybe the brioche.

    For the Streusel Topping

    • Butter - Salted or unsalted butter will both work for this recipe. If you are using salted butter, you might opt to skip adding the extra salt from the recipe.
    • Brown Sugar - you can use light or dark brown sugar according to your tastes.
    • All-Purpose Flour

    For the Casserole

    • Eggs - I like to use large, fresh eggs for this recipe.
    • Milk - I use full-fat, whole milk for the best results. 
    • Vanilla extract - Flavoring extracts are very concentrated, so be careful not to use too much. You could also try a little almond extract for a slightly different flavor vibe.
    • Ground cinnamon - You can also try a little fresh ground nutmeg along with the cinnamon for extra flavor.
    • Sea salt - You might choose to omit this if you are using salted butter.
    • Brown Sugar - You can use light or dark brown sugar.
    • Brioche bread - You can grab a loaf from almost any grocery store. Definitely find this variety because it makes the final dish a little sweeter and a lot more delicious.

    How To Make Brioche French Toast Casserole

    This easy breakfast casserole can be made and placed in the oven in under 15 minutes!

    Step 1 

    Preheat the oven to 350 degrees F. and coat a 9×13 baking dish with cooking spray and set aside.

    Step 2

    Prepare the streusel topping: combine the melted butter, flour and 2/3 cup brown sugar in a small bowl. Mix with a fork until crumbly.

    Step 3

    Spread the broken up bread pieces evenly into the bottom of the prepared casserole dish. 

    Step 4

    In a medium bowl, combine the eggs, milk, vanilla extract and brown sugar. Mix well to combine the ingredients fully.

    Pour the egg mixture evenly over the bread cubes. Sprinkle the streusel crumbles over the top of the casserole.

    Step 5

    Bake in the preheated oven for 40 minutes. Serve the baked French toast casserole warm with butter and syrup or your favorite toppings!

    How To Prep Brioche French Toast Casserole Ahead of Time

    • This easy french toast casserole recipe is an amazing make ahead breakfast option.
    • Prepare the recipe as directed up until baking. 
    • Place the covered dish in the fridge overnight.
    • Bake as directed the next morning.
      -OR-
    • Bake the casserole in its entirety according to the recipe the day before, allow it to cool completely and store it in the fridge covered with plastic wrap or aluminum foil.
    • Remove from the fridge and allow to rest at room temperature for 15-20 minutes
    • Reheat before serving for approximately 20 minutes at 350 degrees F.
    • Or you can heat individual servings in the microwave.

    Recipe Notes

    • Brioche is my favorite type of bread for this, but any type of  bread will work as long as it's sturdy. See below for a few options.
    • You can use half whole milk and half heavy cream for an even more decadent result.

    Brioche vs White Bread

    Brioche bread is made using an enriched dough, meaning the ingredients include eggs and milk, cream, or butter. This addition gives brioche a richer, denser flavor that can’t be found in regular white bread.

    How Long Does Brioche Bread Last

    Brioche will stay fresh for up to 5 days on the counter or in a breadbox when kept in an airtight bag or container.

    You can also freeze brioche for up to 3 months.

    Substitute for Brioche Bread

    Hands down, the best substitute for brioche is challah bread. My other favorite bread choices to use are French bread, sourdough bread, or Texas toast.

    French Toast Casserole Toppings

    The classic topping for French toast is softened butter and a drizzle of real maple syrup with a dusting of powdered sugar. But here are some of my favorite toppings for a truly delicious breakfast treat.

    • Fresh berries or fruit
    • Fruit slices
    • Sauteed apples
    • Fruit pie filling
    • Caramel sauce 
    • Chocolate sauce
    • Powdered sugar
    • Blueberry maple syrup, or other flavored or infused syrup

    What to Serve with French Toast Casserole

    This brioche French  toast bake makes a great breakfast all on its own. But for an even more amazing and complete breakfast, here are some other great ideas for what to serve with your French  toast. 

    • Bacon
    • Sausage links or patties
    • Scrambled eggs or egg bites
    • Hash browns or hashbrown casserole
    • Strawberry yogurt and granola parfaits
    • Toast or English muffins with jam
    • Fruit salad
    • Oatmeal
    • Orange juice or mimosas

    How to Store Leftover French Toast Casserole

    Allow any leftover French toast casserole to cool fully before attempting to refrigerate or freeze. 

    Stored properly in an airtight container or sealed freezer bag, the French  toast bake will be best in the refrigerator for 3-4 days.

    How To Freeze French Toast Casserole

    • Slice the casserole in individual slices and allow to cool completely. 
    • Cut some parchment paper or wax paper into squares and place a square between each piece so the slices don’t stick together when freezing.  
    • Place the French toast casserole slices in a freezer safe ziploc bag or container. 
    • Stored properly, leftovers will be best for 2 months.

    How to Reheat French Toast

    You can reheat French toast in the microwave or in your regular old oven! 

    To reheat in the microwave - place 2 to 3 pieces of French toast casserole in a single layer on a plate with a paper towel under and over them. Heat in 30 second increments, checking every thirty seconds. 

    To reheat in the oven - Preheat the oven to 350°. Place the casserole slices in an oven-safe dish and heat for 7-10 minutes or until warmed through.

    Ingredients

    Streusel Topping

    • 4 tbsp butter melted

    French Toast Casserole

    • 1 loaf Brioche bread Cut or broken into bite-size pieces
    • 8 eggs beaten
    • 2 cups milk
    • 1/2 cup brown sugar
    • 1 tsp vanilla extract
    • 1 tsp cinnamon

    Instructions

    • Prepare the streusel topping. In a small bowl, combine the butter, flour and 2/3 cup brown sugar. Mix with a fork until crumbly.
    • Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside.
