Cinnamon Roll Baked Oatmeal Recipe

Easy to prep and out of the oven in 25 minutes, this cinnamon roll baked oatmeal is a breakfast delight! Not a single morsel will go to waste. It's the healthy-ish version of one of your favorite indulgent breakfast treats!

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raisins optional
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  • Preheat oven to 350 degrees F and spray a 8x8 square baking dish with cooking spray. In a large bowl whisk together the eggs, 1 1/2 cups milk, maple syrup, brown sugar and vanilla extract. In a separate bowl, combine oats, cinnamon and baking powder.
  • Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins, if using. Add the mixture to the prepared baking pan and spread evenly. Bake in the preheated oven for 25 minutes, or until it is uniformly golden brown on the top.
  • Make the icing while the oatmeal is baking. Whisk the powdered sugar and 2 Tbsp milk in a small bowl until icing has formed. If the icing is too thick, add milk 1 tablespoon at a time. If it is too thin, add powdered sugar 1 tablespoon at a time.
  • Let the oatmeal cool for 10 minutes and slice into squares. Drizzle with icing and serve immediately!

Notes

  • In place of raisins, consider using dried cranberries, cherries, fresh berries or chopped apples or peaches. Do not exceed more than 1/2 cup of extras and pat any juicy fruit you might be adding with paper towels to get rid of excess moisture.
  • Quick oats are not recommended for this recipe, as they will cook much differently than old-fashioned oats.
  • Use a piping bag or simply make a small cut in the corner of a ziplog bag to create a perfect cinnamon swirl on top.
  • Pump up the protein in the recipe by adding a tablespoon of protein powder to the dry ingredients.
  • For a gluten free breakfast, use gluten-free oats (be sure to read ingredients on packaging).
