Cottage Cheese Scrambled Eggs

Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese small or large curd
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 2 Tbsp chopped fresh chives for topping

Instructions

  • Crack the eggs into a medium bowl. Add the cottage cheese, salt, pepper and garlic powder. Whisk until the eggs are fully combined. Small cottage cheese curds will remain.
  • Coat a medium or 10-inch nonstick skillet with cooking spray and place it over medium-low heat.
  • Pour the egg mixture into the warm skillet. Let it cook undisturbed for about 30 seconds, or until the edges begin to set.
  • Using a silicone spatula, gently push the cooked eggs from the outside of the skillet toward the center. Continue slowly folding and stirring until soft curds form and the eggs are mostly set, 3 to 5 minutes.
  • Remove the skillet from the heat when the eggs are just set and still soft. They will continue cooking from the residual heat.
  • Top with chopped chives and additional black pepper, if desired. Serve immediately.

Notes

  • Cook the eggs over medium-low heat for the softest, creamiest texture.
  • Cottage cheese softens during cooking but does not melt completely. Use small-curd cottage cheese if you prefer the curds to blend in more evenly.
  • Remove the skillet from the heat while the eggs are still slightly glossy. They will continue cooking from the residual heat.
  • Cottage cheese brands vary in sodium, so taste the finished eggs before adding more salt.
  • Full-fat cottage cheese creates the richest texture, but low-fat cottage cheese works well, too.
  • Add cooked bacon, sausage or ham for extra protein. Sautéed vegetables, shredded cheese and different fresh herbs also make delicious additions.
    Do not overcook the eggs. Remove them from the heat as soon as they are set but still slightly glossy. This keeps the cottage cheese scrambled eggs soft and creamy instead of dry or watery.
