As a cottage cheese lover, I was curious whether the curds would still be noticeable in the finished eggs. Honestly, I hoped they would be! To my delight, they definitely were, but they softened nicely into the hot eggs and gave every bite a creamy texture. Ingredient Notes

Eggs – Four large eggs create enough for two servings. No milk or cream is needed because the cottage cheese adds plenty of moisture and creaminess.
Cottage cheese – I used 4% milkfat small-curd cottage cheese with 13 grams of protein per 1/2-cup serving. The curds remained noticeable in the finished eggs, which I loved, but softened nicely as they cooked.
Seasonings – A simple combination of salt, black pepper and garlic powder adds flavor without overpowering the eggs. Because cottage cheese is naturally salty, you may want to start with less salt and add more after cooking.
Fresh chives – Chives add mild onion flavor and a pop of freshness. Green onions, parsley, dill or basil are delicious substitutes.
Cooking spray – Coat the skillet well to prevent the eggs from sticking. A small pat of butter may be used instead for richer flavor.
How To Make Cottage Cheese Scrambled Eggs

- Combine the ingredients. Add the eggs, cottage cheese, salt, pepper and garlic powder to a medium mixing bowl.

- Whisk the egg mixture. Whisk until the yolks are broken and all of the ingredients are well combined. The cottage cheese curds will remain visible.

- Pour into the skillet. Coat a medium or 10-inch nonstick skillet with cooking spray and heat over medium-low heat. Pour in the cottage cheese and egg mixture.

- Gently scramble the eggs. Cook for 3 to 5 minutes, gently stirring and folding the mixture with a spatula as the eggs begin to set.
- Finish and serve. Remove the skillet from the heat when the eggs are just set and still soft. Top with chopped chives and extra black pepper, if desired, and serve immediately.

Cottage Cheese Scrambled Egg Variations
- Add vegetables. Stir in baby spinach, diced tomatoes, mushrooms, bell peppers or onions. Sauté vegetables before adding the egg mixture so they do not make the eggs watery.
- Increase the protein. Add cooked bacon, breakfast sausage, diced ham or turkey sausage for an even more filling high-protein breakfast.
- Make them cheesy. Sprinkle in shredded cheddar, mozzarella, feta or Parmesan during the final minute of cooking.
- Add extra flavor. Replace the chives with fresh dill, parsley, basil or green onions. A dash of hot sauce or pinch of red pepper flakes adds a little heat.
- Turn them into a complete meal. Spoon the eggs over avocado toast, tuck them into a tortilla or breakfast sandwich, or serve them alongside roasted potatoes and fresh fruit.
- Make one serving. Halve all of the ingredients and cook the eggs in a smaller skillet. Begin checking them after 2 minutes because a smaller batch will cook more quickly.

Cottage Cheese Scrambled Eggs
Ingredients
- 4 eggs
- 1/2 cup cottage cheese small or large curd
