- 6 eggs
- 1/4 cup milk
- 1 tsp salt
- 1 tsp pepper
- 1 cup diced ham
- 1 cup cheddar cheese shredded
- 4 6-inch flour tortillas
- salsa, avocado slices and sour cream for topping, if desired
In a large bowl, whisk the eggs and milk. Stir in the salt, pepper and ham. Coat a large skillet with cooking spray and heat over medium heat. Pour the egg mixture into the pan and cook, stirring frequently, until eggs are scrambled and cooked through.
Sprinkle the cheese over the top and allow it to melt. Divide the mixture between the tortillas and roll into burritos. Top with desired toppings and serve!
You can also wrap the finished burritos in foil and store in the fridge or freezer for later enjoyment.
- Warm tortillas slightly before rolling to prevent breaking or cracking.
- You can just use scrambled egg whites for these burritos.
- Replace the ham with another cooked breakfast meat if desired, such as bacon or sausage.
- I like shredded cheddar, but any melty cheese is delicious in these.
- Add crispy hash brown potatoes to the filling.
