    Breakfast burritos might be the perfect food. Just a few simple ingredients and a few minutes to prep and you’re set with a bulked up breakfast for days. This Ham and Egg Breakfast Burrito only requires 7 simple ingredients, but you can also adjust those to your family’s tastes. 

    These easy Ham Breakfast Burritos are also the perfect meal prep option to have a filling breakfast on busy mornings. Just make them ahead, wrap them in some foil and pop them in the fridge or freezer for a great option any day of the week.

    Breakfast Burrito Recipe Ingredients

    This recipe only calls for 7 simple ingredients, but you can alter and adjust them for your personal tastes.

    Eggs - I use large, fresh eggs in all my recipes.

    Milk - I like to use whole milk, but you can also use 2%.

    Seasonings - Salt and black pepper. Simple is best.

    Ham - Use precooked diced ham. Replace with another cooked breakfast meat if desired, such as bacon or pork sausage.

    Cheese - Shredded cheddar cheese works great, but any melty cheese is delicious (provolone, mozzarella, cojack, etc).

    Tortillas - Corn or flour tortillas. 6-inch is a perfect size.

    Toppings - Chives, salsa, avocado slices, sour cream, hot sauce.

    How to Make Breakfast Ham and Cheese Burritos

    Follow these simple instructions to make these beautiful breakfast burritos.

    Step 1

    In a large bowl, whisk the eggs and milk. Stir in the salt, pepper and ham. 

    Step 2

    Coat a large nonstick skillet with cooking spray and heat over medium heat. Pour the egg mixture into the pan and cook, stirring frequently, until eggs are scrambled and cooked through.

    Sprinkle the cheese over the top of the scramble eggs and allow it to melt. 

    Step 3

    Divide the mixture between the tortillas and roll into burritos.

    Note: You can also wrap the finished burritos in foil and store in the fridge or freezer for later enjoyment.

    How To Prep Ham Breakfast Burritos Ahead of Time

    • Make the scrambled eggs mixture, cover and refrigerate.
    • When ready to eat, reheat the mixture and assemble burritos as directed.

    • Warm tortillas slightly before rolling to prevent breaking or cracking.
    • You can just use scrambled egg whites for these burritos.
    • Replace the ham with another cooked breakfast meat if desired, such as bacon or sausage.
    • I like shredded cheddar, but any melty cheese is delicious in these.
    • Add crispy hash brown potatoes to the filling.
    • Omit the meat and add your favorite vegetables for veggie breakfast burritos.

    You can replace the ham in these tasty burrito with another breakfast meat like chopped Billionaire Bacon pieces or chopped or crumbled breakfast sausage or chorizo.

    You can also opt to add breakfast potatoes or chopped hash browns into the burrito instead of on the side.

    Other options to add to these egg and cheese breakfast burritos include diced tomatoes or onions, green chiles, chopped green bell pepper or red bell peppers, or your favorite veggies.

    How to Store Breakfast Burritos

    Wrap individual burritos tightly in aluminum foil and place directly in the refrigerator or in an airtight container or storage bag. Breakfast burritos will last 4-5 days.

    How To Freeze Breakfast Burritos

    Wrap the burritos in heavy duty foil and place in freezer bags for easy make ahead breakfasts. Eat freezer breakfast burritos within 3-4 months for the best flavor.

    How to Reheat Breakfast Burritos

    Reheat foil-wrapped burritos on a baking sheet in a preheated 350° oven for 15-20 minutes until heated through. Frozen burritos will take about 30-40 minutes to heat through..
