Salmon Breakfast Scramble Recipe

- 2 eggs
- 2 tbsp water
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp Italian parsley finely chopped
- 1/2 tomato chopped
- 6 oz salmon filet cooked or smoked, broken into pieces
Heat a skillet over medium heat and spray generously with cooking spray. Whisk the eggs together with a splash of water. Pour into the hot skillet.
Sprinkle salt, pepper, parsley, tomatoes and salmon over the top. Stir with a spatula until ingredients have been mixed together. Let cook for 2-3 minutes or until eggs are fully cooked through.
Transfer to a plate, top with extra parsley if desired and enjoy immediately!
- Squirt lemon juice over the top of the entire dish just before serving for a freshness boost. Lemon zest will work, too!
- Add a bit of indulgence to this dish by adding a dollop of sour cream or a handful of shredded cheddar cheese to the top before serving.
- Make the recipe creamy by whisking a few tablespoons of Greek yogurt or heavy cream with the eggs before cooking.
