Why I Love This Recipe
I ask my husband to make his famous and oh-so-delicious cured and smoked salmon at least three times a month when the weather is nice. It is so. so good.
On the off chance that we have leftover salmon, I have a few favorite things to do with it and one of them is to make this salmon breakfast scramble! It is tasty, super easy and so much more:
- Perhaps the best part is that it is such a quick breakfast requiring only 10 total minutes of your time (assuming your salmon has already been smoked or cooked).
- It's all good stuff! Salmon, fresh herbs and tomatoes are packed with healthy fats and oils, nutrients, antioxidants and provide magical energy-boosting to start your day!
- Cater ingredients to your liking. If you don't have tomatoes on hand, for example, replace them with a veggie that is sitting in your fridge.
- This is a great weekend brunch recipe, as well as the perfect breakfast any day of the week.
- One of the best things about it is that it's a hearty breakfast option, providing a full breakfast in a single pan and keeping hunger at bay well through the morning.
Recipe Ingredients
Eggs - Use fresh eggs when possible! The recipe calls for two eggs, but feel free to add up to four to bulk up the meal (and depending on how many people you're feeding).
Seasonings - Sea salt or kosher salt and ground black pepper are a simple yet powerful team! Change this up if you'd like and use whichever spices or seasonings you typically enjoy on scrambled eggs.
Fresh herbs - Fresh chives, parsley or cilantro are my favorite herbs to add to egg scrambles, but experiment with others if you so desire.
Tomato - Chop a half of a medium tomato or a handful of cherry tomatoes or grape tomatoes that have been cut in half.
Salmon - One 6-8 oz fresh salmon filet that has been cooked or smoked to your liking works best for this recipe. Break the meat into bite size pieces easily with a fork before adding to the scramble.
Prep Salmon Breakfast Scramble Ahead of Time
- Be sure your salmon has been cooked or smoked and is stored in the fridge in an airtight container.
- Chop the tomato and parsley the day before and store in the fridge.
- Assemble recipe as directed when you're ready to enjoy it in just a few minutes!
How To Make Salmon Breakfast Scramble
Step 1
Heat a skillet over medium heat and spray generously with cooking spray. Whisk the eggs together with a splash of water.
Pour into the hot skillet.
Step 2
Sprinkle salt, pepper, parsley, tomatoes and salmon over the top. Stir with a spatula until ingredients have been mixed together. Let the egg mixture cook for 2-3 minutes or until eggs are fully cooked through.
Step 3
Transfer to a plate, top with extra parsley if desired and enjoy immediately!
Recipe Notes
- Squirt lemon juice over the top of the entire dish just before serving for a freshness boost. Lemon zest will work, too!
- Add a bit of indulgence to this dish by adding a dollop of sour cream or a handful of shredded cheddar cheese to the top before serving.
- Make the recipe creamy by whisking a few tablespoons of Greek yogurt or heavy cream with the eggs before cooking.
How To Reheat Scrambled Eggs
Reheating cooked scrambled eggs that have been refrigerated is easiest in the microwave. Transfer eggs to a microwave-safe dish and cover loosely with a paper towel. Cook in 30-second intervals, stirring after each, until heated through.
They can also be reheated on a stove top. Transfer to a medium skillet and cook over medium heat, stirring often, until heated through.
For both methods, add a splash of water or milk if the mixture seems too dry.
How To Freeze Scrambled Eggs
Allow scrambled eggs to cool completely before freezing. Transfer to an airtight container or a heavy duty freezer bag. Freeze for no more than 6 months for best results.

- Create a breakfast bagel sandwich! Don't forget the fried egg and cream cheese spread.
- Breakfast bowls with salmon, hash browns, eggs, cheese and green onions are delicious!
- Top a piece of toast with it and add an avocado slice to the top. Or better yet, place shredded salmon on top of a piece of avocado toast.
- Sandwich in an English muffin with sliced red peppers, a runny egg and goat cheese.
