Scrambled Egg Bake Recipe

Give your scrambled eggs a delicious twist by baking them along with a handful of other simple ingredients. This scrambled egg bake requires just a few minutes of prep, a few ingredients and it will make guests swoon.

Ingredients

  • 10 eggs
  • 2 tsp cornstarch
  • 2 tsp water
  • 7 oz diced green chiles
  • 12 oz evaporated milk
  • 1 tsp salt
  • 2 cups cheddar cheese shredded, divided

Instructions

  • Preheat oven to 375 degrees F. Spray a 9x13 baking dish with cooking spray and set aside. In a large bowl, whisk the eggs.
  • Combine cornstarch and water in a small bowl with a tight lid. Seal and shake until free of lumps.
  • Add cornstarch slurry, green chiles, evaporated milk, salt and 1 ½ cups of shredded cheese to the egg mixture. Pour egg mixture into the prepared baking dish. Bake in the preheated oven for 35 minutes.
    Sprinkle the remaining 1/2 cup of cheese over the top and bake for an additional 10 minutes.
  • Remove from the oven once a nice golden brown layer forms on the top. Let sit for 10 minutes, cut into squares and enjoy!

Notes

  • Create a breakfast sandwich with leftover egg casserole! Sandwich in a bagel or bread slices along with cooked bacon and your favorite cheese.
  • If you have a favorite cheese sauce, pour it over individual portions before serving!
