Recipe Ingredients
Eggs - There's no need to let the eggs sit out at room temperature before whisking them. Pull straight from the fridge!
Cornstarch slurry - The corn starch slurry helps the eggs to thicken, creating a more solid and sturdy egg bake. Be sure to create the slurry first in order to avoid lumps from forming.
Diced green chiles - This ingredient adds just a tiny bit of spice, but if you'd like you can omit altogether.
Evaporated milk - Any variety of milk can be used in place of this ingredient, although I highly recommend using evaporated milk!
With less moisture in this variety of milk, the end result is creamier and thicker.
If using another variety such as whole milk or skim milk, use 1/2 cup of milk in place of a can of evaporated milk.
Salt - Salt is simple and adds the perfect flavor boost! A little bit goes a long way. Use kosher salt, sea salt or any other variety.
Shredded cheddar cheese - Use any variety of melty cheese that you have on hand. Other good options include provolone, mozzarella or colby jack.
Prep Baked Scrambled Eggs Ahead of Time
- Prep the recipe as directed up to the point of pouring the mixture into the prepared baking dish.
- Cover tightly with plastic wrap and refrigerate over night.
- The next morning, pull from the fridge 20 minutes before baking.
- Bake as directed!
How To Make Scrambled Egg Bake
Step 1
Preheat oven to 375 degrees F. Spray a 9x13 baking dish with cooking spray and set aside. In a large bowl, whisk eggs.
Step 2
Combine cornstarch and water in a small bowl with a tight lid. Cover and shake until free of lumps.
Step 3
Add cornstarch slurry, green chiles, evaporated milk, salt and 1 ½ cups of shredded cheese to the egg mixture.
Pour egg mixture into the prepared casserole dish. Bake in the preheated oven for 35 minutes.
Sprinkle the remaining 1/2 cup of cheese over the top and bake for an additional 10 minutes.
Step 4
Remove from the oven once a nice golden brown layer forms on the top. Let sit for 10 minutes, cut into squares and enjoy!
