    Scrambled Egg Bake Recipe

    Give your scrambled eggs a delicious twist by baking them along with a handful of other simple ingredients. This scrambled egg bake is such a quick breakfast and requires just a few minutes of prep, a few ingredients and it will make guests swoon.

    Why I Love This Recipe

    My aunt, who is such a lovely human, makes this scrambled egg casserole all the time for family gatherings. In addition to the fact that it makes me think of her every time I eat it, this is a great breakfast option for the following reasons:

    • Only 10 minutes of prep required for this delicious breakfast casserole!
    • It's a great option to make at the beginning of the week, then reheat for an easy breakfast on busy mornings.
    • There is room to add spice, if desired.
    • This will change your breakfast game and feed your whole family.
    • If you're needing an easy gluten free breakfast option, this recipe is an easy way to accomplish that.
    • All of the ingredients are likely already in your kitchen as we speak.

    Recipe Ingredients

    Eggs - There's no need to let the eggs sit out at room temperature before whisking them. Pull straight from the fridge!

    Cornstarch slurry - The corn starch slurry helps the eggs to thicken, creating a more solid and sturdy egg bake. Be sure to create the slurry first in order to avoid lumps from forming.

    Diced green chiles - This ingredient adds just a tiny bit of spice, but if you'd like you can omit altogether.

    Evaporated milk - Any variety of milk can be used in place of this ingredient, although I highly recommend using evaporated milk!

    With less moisture in this variety of milk, the end result is creamier and thicker.

    If using another variety such as whole milk or skim milk, use 1/2 cup of milk in place of a can of evaporated milk.

    Salt - Salt is simple and adds the perfect flavor boost! A little bit goes a long way. Use kosher salt, sea salt or any other variety.

    Shredded cheddar cheese - Use any variety of melty cheese that you have on hand. Other good options include provolone, mozzarella or colby jack.

    Prep Baked Scrambled Eggs Ahead of Time

    • Prep the recipe as directed up to the point of pouring the mixture into the prepared baking dish.
    • Cover tightly with plastic wrap and refrigerate over night.
    • The next morning, pull from the fridge 20 minutes before baking.
    • Bake as directed!

    How To Make Scrambled Egg Bake

    Step 1

    Preheat oven to 375 degrees F. Spray a 9x13 baking dish with cooking spray and set aside. In a large bowl, whisk eggs.

    Step 2

    Combine cornstarch and water in a small bowl with a tight lid. Cover and shake until free of lumps.

    Step 3

    Add cornstarch slurry, green chiles, evaporated milk, salt and 1 ½ cups of shredded cheese to the egg mixture.

    Pour egg mixture into the prepared casserole dish. Bake in the preheated oven for 35 minutes.

    Sprinkle the remaining 1/2 cup of cheese over the top and bake for an additional 10 minutes.

    Step 4

    Remove from the oven once a nice golden brown layer forms on the top. Let sit for 10 minutes, cut into squares and enjoy!

    Recipe Notes

    • Create a breakfast sandwich with leftover egg casserole! Sandwich in a bagel or bread slices along with cooked bacon and your favorite cheese.
    • If you have a favorite cheese sauce, pour it over individual portions before serving!

    How To Make Eggs Taste Better

    Add any of the following extra ingredients to your eggs for a delicious flavor boost:

    • Salt and freshly ground pepper is such a simple yet powerful combo.
    • Add spice by adding red pepper flakes, hot sauce, chili powder, sriracha, diced jalapeno peppers or a pinch of cayenne pepper.
    • Add your favorite breakfast meat, such as cooked bacon, ham or turkey sausage.
    • Fresh herbs make any plate of eggs taste better.
    • Add sauteed yellow or green onions.
    • Your favorite chopped vegetables such as bell peppers or mushrooms will add both flavor and texture to any batch of eggs.

    • Italian flat-leaf parsley or regular parsley
    • Dill
    • Chives
    • Cilantro
    • Thyme

    Evaporated Milk vs Regular Milk

      Sounds delicious, but I’m single. How long can this stay in the fridge? Or freezer?

        Hi Paula! Egg bakes can typically be kept in the fridge for 3 to 4 days and in the freezer up to 3 months.
