I love breakfast potatoes! They’re the perfect addition to any morning meal, or even evening meal. And these Crockpot Breakfast Potatoes are my favorite to make!
This ridiculously easy recipe only requires 10 minutes to prepare and is made with red potatoes. My preferred potato! They’re so soft and delicious. I have a hard time stepping away from these once I’ve taken the first bite.
And these simple potatoes also make a great side dish for dinner as well! Serve them with everything from meatloaf to pork chops to burgers as a scrumptious side option.
Breakfast Potato Recipe Ingredients
This simple recipe uses just a few standard and common ingredients.
Baby red potatoes - Cut in bite-sized pieces. If the potatoes are small enough, they can be quartered. Replacement: Yukon gold potatoes.
Butter - Salted butter, unsalted butter, or olive oil can be used.
Seasonings - Seasoning salt packs a punch, along with paprika, salt and pepper.
Toppings - Finely chopped Italian flat-leaf parsley, Parmesan cheese, fresh black pepper.
How to Make Crockpot Breakfast Potatoes
Making these easy breakfast potatoes is as simple as 1, 2, 3!
Step 1
Wash and cut the potatoes.
Add the potatoes to the slow cooker.
Step 2
In a small or medium bowl, combine the melted butter, seasoned salt, paprika, salt and pepper and mix well.
Pour over the potatoes and stir to combine.
Step 3
Cook on high heat for 2 hours or low heat for 4 hours, or until the potatoes are fork tender.
Sprinkle with parsley and serve!
How to Prep Slow Cooker Breakfast Potatoes Ahead of Time
- Make the recipe in its entirety the day before serving and reheat the next morning as needed.
OR - Put all the ingredients in the crock pot, and set your slow cooker’s preset timer to start cooking 4 hours before breakfast time!
Recipe Notes and Tips
- The potatoes cook more evenly when cooked on low heat for 4 hours.
- Use a little cooking spray on the inside of the crock pot to help avoid sticking pieces.
- Be sure to check the potatoes a few times throughout the cooking process to ensure they’re not being overcooked. Gently stir around as needed.
- Potatoes are done when a fork can be easily inserted into and removed from a potato.
- Switch up seasonings with a little onion powder, garlic powder, or even cayenne pepper.
- Consider adding cooked bacon or ham to the slow cooker 30 minutes before cooking time is done.
Red Potatoes vs Yellow Potatoes
Red potatoes have a higher moisture and low starch content and hold their shape better than yellow potatoes, especially when roasting or boiling.
They also keep their firm density when cooked, whereas yellow potatoes become softer and creamier in texture. Yellow potatoes are great for mash, baking and fries.
How To Clean Red Potatoes
Rinse red potatoes under cold running water while scrubbing them gently with a vegetable brush or soft scrub brush to remove any remaining dirt. Pat dry with paper towels or a clean kitchen towel.

How to Store Leftover Breakfast Potatoes
Allow the cooked potatoes to cool fully before storing. Place in an airtight container or storage bag and keep refrigerated. Eat within 3-4 days.
Can You Freeze Cooked Potatoes
Yes! Cooked breakfast potatoes can be frozen for up to 3 months! Use a freezer safe bag for storage, and remove as much of the air from the bag as you can. Use a vacuum sealer or just a straw. Seal the bag tightly, date, and store. Allow potatoes to thaw in the fridge or cook in the oven from frozen for about 15-20 minutes.
How to Reheat Leftover Potatoes
I prefer to reheat these in a 350° Oven or Air Fryer to crisp them a bit after being refrigerated.
