Recipe Ingredients

Yellow cake mix - Really, any variety of cake mix will work here. You literally cannot mess this recipe up and you create different flavors by using different varieties.
I've found that white or yellow cake mixes taste delicious when paired with mashed banana. Chocolate cake mix would add a yummy spin!
Bananas - Make sure your bananas are nice and ripe and easily mashable.
Eggs - There's no need to set your eggs out at room temperature before preparing these muffins. Grab them from the fridge and crack right into your mixing bowl.
Optional mix-ins - Add up to 1 cup total of any of the following additional ingredients: chocolate chips, coconut flakes or dried fruit such as raisins or cranberries.
You may also add cinnamon or other warm spices to the mix to dress up the flavor.
How to Make 3 Ingredient Banana Muffins
Step 1
Preheat oven to 350 degrees F. Place cupcake liners in a muffin tin and set aside.
Step 2
Combine contents from a box of cake mix, mashed bananas and eggs in a large mixing bowl and stir until free of lumps.

Add 1/4 cup of the batter to each liner.

Step 3
Bake in the preheated oven for 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Serve warm with butter!
Store leftovers in an airtight container at room temperature for up to 5 days.

Prep 3-Ingredient Banana Muffins Ahead of Time
- Make this easy recipe even easier by preparing the batter the night before.
- Cover the bowl with plastic wrap and refrigerate overnight.
- Remove from fridge 20 minutes before baking.
- Prepare as directed and bake!
- Alternatively, prepare the entire recipe the night before and warm them up in the morning, as needed.
Recipe Notes
- Add 1/2 cup of almond butter or peanut butter to the batter for a peanut-flavored twist.
- The sticky batter can stick, even to paper liners! Squirt a small amount of cooking spray inside the liners before adding the batter.
- 1-2 tablespoons of chia seeds make a great addition.
- Any variety of extract will add a nice boost of flavor! Vanilla extract, almond extract or rum extract would all complement the banana flavor nicely.
- Go the extra step and add a streusel topping to the muffins before baking! Combine 1/2 cup each of brown sugar and flour. Add 3 tablespoons of melted butter and stir till crumbly. Sprinkle over top of the muffins and bake!
- Make a double batch and freeze some for later!
- Natural sweetness can be added in the form of maple syrup or honey. Add up to 1/4 cup total.
What To Do With Old Muffins
If muffins are past their expiration date and contain visible mold or discoloration, discard immediately.
When they are just stale, you can turn them into bread pudding! Or revitalize them by wrapping them in a moist paper towel (one at a time) and popping them in the microwave for 30 seconds.
Ripe vs Unripe Bananas
