If there’s one breakfast recipe that my boys absolutely devour, it is these Ham and Egg Hawaiian Roll Breakfast Sliders. I watched my oldest stuff one in his mouth and grab two more in each hand before running off.
And I can’t blame them. These egg and cheese breakfast sliders on soft, sweet Hawaiian rolls are absolutely irresistible. Of course, I eat mine much more demurely, leaning against the kitchen counter with a small bowl of dijon mustard for dipping.
These mini sandwiches are also great for meal prep or overnight guests. They're easy to make and completely customizable to meet all your family’s tastes. Did I mention they’re irresistible? I mean, the flavors, wow!!
Recipe Ingredients
These ham and egg cheese sliders are easy to put together, but hard to put down. They're made with fresh, simple ingredients and sure to be a family favorite.
Eggs - Nice fluffy scrambled eggs add such a perfect texture to these sandwiches. You can replace scrambled eggs with any variety, such as fried eggs.
Hawaiian sweet buns - Use a 12 or 15-bun package. Either will fit in a 9x13 pan. Use the same amount of filling ingredients.
Deli ham - Or deli turkey or any other deli meat.
Additional breakfast meats - Chopped bacon or breakfast sausage, or sausage patties, especially for the meat lovers.
Cheddar cheese - Any melty cheese works great, such as provolone cheese, mozzarella, Swiss cheese, or any type of cheddar.
Cream cheese - Soften first at room temperature for easy spreading.
Salted butter - Melt and use a basting brush to evenly spread the butter over the tops of the buns before baking.
Parmesan cheese - This adds the absolutely perfect cheesy crunch to the final product.
How to Make Breakfast Sliders with Ham
Follow these step-by-step instructions for perfect breakfast sliders the whole family will enjoy
Step 1
Preheat your oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray. Slice the whole sheet of slider buns in half with a serrated knife to separate the top buns from the bottoms. Set aside.
Step 2
In a large bowl, beat the eggs and add a splash of water.
Step 3
Heat a medium skillet over medium heat and spray with cooking spray. Pour the egg mixture into the hot skillet and stir until cooked through and “scrambled.” Set aside.
Step 4
Line the bottom of the pan with the bottom half of the rolls. Top with the ham slices, additional breakfast meat (if using), scrambled eggs and cheddar cheese.
Step 5
Spread the cream cheese onto the bottoms of the roll tops and place the top layer of rolls on top of the cheese.
Step 6
Melt the butter and use a basting brush to spread the melted butter on the top of the buns. Then sprinkle the grated Parmesan cheese over the top of the sliders. The buttery topping will help the parmesan stick to the the top of the rolls
Step 7
Bake in the preheated oven for 15 minutes, or until warmed through. Cut at the seams of the dinner rolls with a knife to separate the sandwiches and serve warm!
How to Prep Ham and Egg Breakfast Sliders Ahead of Time
- Prep entirely up to the point of baking. Cover and refrigerate.
- Remove from the fridge 20 minutes before baking and bake according to recipe instructions.
OR - Prep parts of the recipe ahead of time, such as scrambling the eggs and cooking/chopping the breakfast meats.
- Assemble the sliders and bake as directed.
Recipe Notes and Tips
- This recipe will work using either a 12 or 15 pack of sweet rolls. Both will fit in the recommended 9x13 pan, but the 12 pack will leave extra space in the baking dish. Whether you are using 12 or 15 rolls, use the same amount of filling ingredients.
- Depending on the number of buns I use, I sometimes have extra scrambled eggs. See my section just below for how to use them up!
- Use a sharp knife to cut down the seams of the buns before serving. Not doing this will ensure everything falls apart.
- Allow the cream cheese to soften at room temp so it spreads easier.
- Mix a little garlic powder with the butter mixture before spreading over the tops of the rolls.
- Use any kind of breakfast meat you like.
- Add in some fresh veggies like spinach or small chopped broccoli pieces.

What To Do With Leftover Scrambled Eggs
Depending on whether you use the 12 or the 15 pack of rolls, you might have some leftover scrambled eggs. Leftover scrambled eggs are good for up to 3-4 days when refrigerated properly. Here’s a few great ways to use them up.
- Use them in breakfast tacos or a breakfast quesadilla or burrito
- Make some fried rice
- Egg salad sandwiches or egg and pepper sandwiches
- Add them to a fresh salad for some extra protein
Cream Cheese vs Cream Cheese Spread
Cream cheese spread is a softer, saltier version of block cream cheese. The spread can also be whipped or blended and flavored in a variety of ways during the manufacturing process.
Scrambled Eggs vs Fried Eggs
You can use scrambled or fried eggs for this breakfast slider recipe. If you are using fried eggs, I recommend cooking them to a firm yolk so it isn’t running out all over when you serve the sandwiches.
How to Serve Breakfast Ham and Egg Sliders
I like to serve these breakfast sliders with some Cheesy Breakfast Potatoes and a slice of Cherry Coffee Cake, because I like a little sweet with my savory. Of course, they're rather amazing on their own.
How To Tell If Deli Ham Is Bad
Deli ham will show obvious signs that it has spoiled or gone bad. Look for tell-tale sign like mold or obvious discoloration first. If you see a gray or green discoloration on the ham, throw it away.
Ham that has gone bad will also have a slick or slimy texture to it. It also may be overly sticky or tacky. Lastly, if it smells sour or funky instead of smoky and salty, it’s best to discard it.
How to Store Leftover Breakfast Sliders
Allow the sandwiches to cool completely before refrigerating or freezing.
To refrigerate - you can wrap individual sandwiches and place them in the fridge in a plastic bag or airtight container for easy grab and go. Or simply top the remaining sandwiches in the casserole dish with foil and place in the refrigerator.
To freeze - Wrap individual sandwiches and plastic wrap and aluminum foil and place in a freezer safe bag in the freezer for up to 4 months.
How to Reheat Refrigerated Sandwiches
You can reheat leftover breakfast sandwiches in the oven or the microwave.
In the microwave - cover the sandwiches with a paper towel and reheat at 75 to 80% for 1 to 2 minutes
In the oven - preheat the oven to 350° F, Wrap the sandwiches in foil or place in a pie plate or baking dish and cover with foil. Heat in the oven for 7 to 10 minutes. For crispier tops, you can skip the foil
How To Reheat Frozen Breakfast Sandwich in Oven
First preheat the oven to 350° F. If you are only reheating a couple sandwiches, wrap them individually in foil and place in the oven on the rack for about 10 to 15 minutes or until heated through.
If you are reheating multiple sandwiches, I suggest placing a rack in a baking dish and placing the sandwiches on top of the rack and cover baking dish with foil. Place in the oven for 10 to 15 minutes or until heated through.
