Spinach, Egg and Cheese Bake Recipe Ingredients
Use fresh ingredients for the best, most flavorful results.

Eggs - I like to use large, fresh eggs in my recipes.
Diced green chiles - These add more flavor than spice, but feel free to omit if desired.
Milk - Any variety. I like to use whole milk.
Salt - Any variety.
Mozzarella cheese - Any shredded cheese that melts well can be used, such as cheddar, muenster, colby jack.
Spinach - Doesn’t hurt to use more than 3 cups. It’ll cook down nicely. See suggestions below for other greens or for using frozen spinach.
Green onions - I adore the flavor the green onions add, but these can be replaced with other onion varieties, not red. (no more than ½ cup chopped).
How to Make This Spinach Egg Bake Recipe
This is a shortened form of the full instructions found in the recipe card below. Be sure to follow all the instructions at the bottom of the post for the best results.
Step1
Preheat the oven. Coat a baking dish with cooking spray and set aside.
Step 2
In a large bowl, whisk the eggs.
Add the green chiles, milk, salt, most of the shredded cheese, spinach and green onions to the egg mixture.
Step 3
Pour the egg and spinach mixture into the prepared baking dish.

Bake for 35 minutes.
Remove from the oven, sprinkle the remaining cheese over the top, place back in the oven, and bake for an additional 10-15 minutes until a nice golden brown layer forms on the top
Step 4
Remove from the oven.
Let sit for 10 minutes and enjoy!
How to Prep Spinach Egg Bake Recipe Ahead of Time
- The best way to prep ahead is to make the casserole in its entirety and store covered in the fridge.
- When ready to serve, heat individual servings in the microwave as needed.
OR - Once the egg mixture is added to the baking dish, cover and refrigerate.
- When ready to enjoy, bake as directed.
Recipe Notes and Tips
- I like to use baby spinach because the leaves are a little more tender.
- You can use frozen spinach, but I highly recommend letting it thaw overnight or defrosting it in a microwave, then squeezing out the excess water content through a cheesecloth or sieve before adding it to the rest of the ingredients.
- Add other favorite breakfast ingredients like chopped, cooked bacon or diced ham pieces.
- Add fresh herbs or sliced sun-dried tomatoes for a boost of flavor.
- Make sure you let the casserole cool for at least 10 minutes before digging in so everything has a chance to set.
- You can sub chives for the scallions. You can also use some small diced white or yellow onion in place of the green onion. I don’t recommend red or purple onions as they tend to leach their color.
- You can use a muffin tin instead of a baking dish to make egg muffins. Cooking time will differ.
Spinach Substitutes
You can substitute other types of leafy greens or fresh veggies for your fresh spinach in this, and many, recipes. Bear in mind, some of these have a tougher or more fibrous texture and may need to cook longer or be chopped into smaller pieces. I like to remove the center fibrous rib on fibrous greens like kale. Others have a more distinct earthy or peppery taste to them.

Many pre-shredded, packaged cheeses use an anti-caking agent to keep them for clumping, but that also hinders their meltability a little as well.

How To Keep Egg Casserole Warm
You can keep your breakfast bake warm in the oven. If you have a “warming” setting on your oven, that’s perfect. If not, just set the oven to around 180-200°. Loosely cover the casserole dish with aluminum foil so it doesn’t dry out. You can also add a pie dish or small casserole dish with some water on a lower rack to create steam and keep moisture in the oven.
How To Store Cooked Eggs
Allow the egg bake to cool completely to room temperature before refrigerating or freezing.
If you only have a little casserole left, transfer it to an appropriate sized airtight container and place in the refrigerator.
If you have a fair amount left and just want to store it in the baking dish, place a sheet of plastic wrap directly against the exposed sides of the casserole and cover tightly with another piece of plastic wrap.
Can You Freeze Breakfast Casserole
Yes! This spinach egg bake freezes beautifully and is a great option to have on hand. Let the casserole cool completely before freezing.
Freeze in an airtight freezer-safe bag or container for up to 4 months. Be sure to write the freeze and “use by” dates on the bag. I like to freeze in individual portions for ease. Allow to thaw in the fridge or defrost in the microwave.
How to Reheat Leftover Egg Casserole
Reheat this in a preheated 325-350° F oven for about 10-15 minutes or until completely heated through to the center.
You can also microwave slices of this casserole in a microwave safe dish on medium-high heat for 2-3 minutes until hot.
