Why I Love Avocado and Feta Toast

It’s no secret how much I have come to love avocado toast. And I think what I love most about it is how versatile this basic breakfast can be.

Take this avocado toast with feta cheese, for example. I could literally eat this every day for breakfast and never get tired of it. And it’s so customizable!

Eat as is or use this recipe as a starting point to create the most glorious avocado toast ever with the loads of suggestions throughout this post. Here’s a few more reason you’ll love this amazing breakfast.

    • Feta cheese is so dreamy! Feta + avocado for breakfast = perfection.
    • A quick and easy snack to throw together.
    • Avocado is a healthier option than cream cheese.
    • Easily customizable! Just add seasonings of your choice!
    • A healthy and delicious way to start the day.

    Recipe Ingredients

You only need a few simple ingredients to make this amazing avocado on sourdough toast.

Cutting board with two slices of bread, an avocado, a bowl of feta cheese and a few spices.
    • Fresh ripe avocado - Chop finely so they’re easy to mash. Use the back of a fork or a potato masher. Learn how to select perfectly ripe avocados and how to slice them here.
    • Feta cheese crumbles - you can buy crumbles or just break crumbles from a block of feta. You can also use goat cheese instead of feta.
    • Bread - Sourdough my favorite bread for this, but any type of  bread will work as long as it's sturdy. You can make your own sourdough or grab a loaf from the grocery store. This can also be made into a gluten free recipe by using your favorite gluten-free bread.
    • Lemon juice - Fresh tastes best.
    • Salt and Black Pepper - to taste.

    How to Season Avocados

Transform this super simple breakfast into the best avocado toast recipe ever! Discover some new ideas about what seasoning to put on avocado toast that will quickly turn easy avocado toast into one of your favorites in my How to Season Avocado Toast post.

Here are a few ideas to get you started:

    • Cumin or coriander - Used sparingly, these are both great on avocado
    • Garlic and onion powder
    • Chili Powder
    • Smoked paprika or chipotle seasoning - these will give a greater depth of smoky flavor
    • Smoked salt
    • Sumac - this has a slight citrusy taste that is very pleasant on avocado. It’s a commonly used spice in Middle Eastern and Mediterranean cuisine.
    • Everything bagel seasoning
    • Crushed red pepper flakes
    • Hot sauce - Use your favorite! I like Tabasco or Cholula.
    • Sriracha - the classic
    • Harissa sauce - Harissa is a North African hot sauce made from roasted red peppers, chili peppers and various spices. It’s a great mix of heat and sweet.
    • Fresh or sauteed jalapenos or other hot peppers
    • Tajin sauce - these bottled spice blends and sauces are similar to standard hot sauce but also has hints of lime and other seasonings.

How to Prep Avocado Toast with Feta Ahead of Time

    • I don’t recommend preparing the avocados until ready to eat, but if you really want to save time, mash the avocado in advance and press plastic wrap firmly over the surface so no air can get to it.
    • Place in the refrigerator immediately. Refrigerate overnight (but no longer than this).

    Recipe Notes

    • If you have leftover avocado toast, add lunch meat and turn it into a sandwich.
    • Black pepper, cayenne pepper, or even smoked paprika can be added to the avocado mixture for an added kick.
    • When spreading the mashed avocado over the bread slices, place a heaping pile in the center of the piece of bread and spread from the center all the way to the outer edges.
    • Once an avocado has been opened, it’s only good for a few days. See tips below on how to keep avocado fresh longer.
    • You can make this recipe gluten free simply by subbing your favorite gluten free toast.

    Tips & Tricks

    • Avocados should be stored at room temperature. Only put them in the fridge if they are getting overly ripe or if you are trying to extend their shelf life.
    • Dice the avocado in the shell and use a spoon to scoop it into a bowl before mashing.
    • Keep the pit and place it in the container with the mashed avocado to help keep it from oxidizing and turning brown.
    • You can also use an extra squeeze of fresh lemon juice or lime juice to help prevent oxidation.

How to Top Avocado Feta Toast

These are just a few of my favorite ways to take this basic recipe to the next level. You can find loads more great options in my Copycat Dunkin Avocado Toast or How to Season Avocado Toast posts.

    • Sliced roasted red pepper
    • Roasted tomato slices
    • Cherry tomatoes or grape tomatoes
    • Minced red onion
    • Crumbled bacon pieces
    • Bruschetta or Pico de Gallo
    • Poached or fried egg for "avocado egg toast"
    • Diced hard-boiled eggs
    • Smoked salmon or lox
    • An extra drizzle of olive oil or balsamic glaze
    • Fresh cilantro, fresh basil, or other herbs
    • Everything bagel seasoning

    How to Store Leftover Avocado

Leftover mashed avocado should be refrigerated in an airtight container immediately. Try to leave as little space for air as possible in the container, this will help delay the avocado turning brown due to oxidation.

How Long Does Feta Cheese Last

On average, feta cheese will usually last 1 week in the refrigerator. If it smells overly ripe or yeasty, it may be past its shelf life. Also, look for visible signs of mold or bacteria.

How to Toast Sourdough Bread in the Oven

You can toast sourdough bread in the oven at 400 degrees F, in a toaster oven, under the broiler, or even on a skillet or grill top. Lightly brush the slice of sourdough with some olive oil. Then toast for 2-3 minutes on each side until lightly golden brown and slightly crisp.

    FAQs About Avocados

Can you store fresh avocados in water?

It is not recommended to store whole avocados with skin in water. You can store sliced avocado without the outer skin in water. Place sliced or smashed avocado in an even layer in an airtight container, then cover with a thin layer of cold water, cover the container, and place in the refrigerator. Pat them dry with a paper towel before using.

How do you ripen an underripe avocado?

To help speed along the ripening process you can put an avocado in a brown paper bag with a fruit that produces ethylene gas. Common fruits to use are bananas, apples, pears, cherries, citrus fruits, and kiwi.
