Avocado toast with roasted tomato is one of my favorite ways to start the day. It’s a super simple and delicious breakfast option that only requires a few common ingredients but is packed with flavor, healthy fats and other health benefits!

Why I Love This Avocado Toast with Roasted Tomatoes
When my Dunkin’ runs for avocado toast started becoming my favorite breakfast obsession, I knew I needed to start making it at home. And making it home helps save a few bucks for other things.
This avocado toast with roasted tomatoes is a great way to have a quick, easy, and tasty breakfast packed with flavor and healthy fats. And it is so, so delicious!
Plus, I can make the best avocado toast to my liking and eat it in less time than it would take me to get dressed and get to Dunkin'. Here are a few more reasons to love this perfect breakfast recipe:

Tomato Avocado Toast Recipe Ingredients

- Fresh avocado - Learn how to select perfectly ripe avocados here. Chop finely so they’re easy to mash. Use the back of a fork or a potato masher.
- Tomatoes - I recommend vine-on tomatoes or Romas or anything really plump and juicy. Halved cherry tomatoes or grape tomatoes can also be used.
- Bread - Sourdough bread is my favorite, but any type of bread will work as long as it's sturdy. You can make your own sourdough or grab a loaf from the grocery store. This can also be made into a gluten free recipe by using your favorite gluten-free bread.
- Lemon juice - Fresh tastes best!
- Seasonings/Toppings - Chives or other chopped fresh herbs such as parsley or green onion, cayenne pepper, crushed red pepper flakes, seasoned salt, a drizzle of extra-virgin olive oil. See the full list of suggested toppings below.
How to Make Avocado Toast with Tomato
Step 1
Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
Step 2
Slice your tomato and arrange the slices on the parchment in a single layer. Drizzle the tomato slices with a little bit of olive oil and sprinkle them with salt and black pepper.

Step 3
Bake the tomatoes in the preheated oven for 20 minutes, or until crispy around the edges. Remove them from the oven and let cool.
Step 4
In a small mixing bowl, mash the avocado with fork tines. Add the lemon juice and salt. Mix well to combine.

Step 5
Spread half of the avocado mixture on each slice of toasted bread.
Step 6
Divide the roasted tomato slices between the avocado toast and top with chives.
How to Prep Avocado Tomato Toast Ahead of Time
- You can roast the tomatoes ahead of time. Allow them to cool completely then cover and refrigerate. Stored properly, they’ll be good for up to 5 days.
- I don’t recommend preparing the avocados until you are ready to eat.
Recipe Notes
- Black pepper, cayenne pepper, or even smoked paprika can be added to the avocado mixture for an added kick.
- When spreading the mashed avocado over the bread slices, place a heaping pile in the center of the piece of bread and spread from the center all the way to the outer edges.
- If you have leftover avocado tomato toast, add cheese (optional) and turn it into a sandwich.
- Once an avocado has been opened, it’s only good for a few days. See tips below on how to keep avocado fresh longer.
- You can make this recipe gluten free simply by subbing your favorite gluten free bread.
Tips & Tricks
- You can dice the avocado in the shell and use a spoon to scoop it into a bowl before mashing.
- Keep the pit. If you are mashing the avocado a little in advance, immediately put it in an airtight container with the pit to keep it from oxidizing and turning brown.
- You can also use an extra squeeze of lemon juice or lime juice to help prevent oxidation.
- Avocados should be stored at room temperature. Only put them in the fridge if they are getting overly ripe or if you are trying to extend their shelf life.
How To Ripen an Underripe Avocado
To help speed along the ripening process you can put an avocado in a brown paper bag with a fruit that produces ethylene gas. Common fruits to use are bananas, apples, pears, cherries, citrus fruits, and kiwi.
Best Way to Toast Sourdough Bread
You can toast sourdough bread in a toaster or oven, in a toaster oven, under the broiler, or even on a skillet or grill top. Lightly brush the slice of sourdough with some olive oil. Then toast on both sides until lightly golden brown and slightly crisp.

How to Serve Roasted Tomato and Avocado Toast

- Sliced Roasted Red Pepper
- Minced red onion
- Crumbled bacon pieces
- Bruschetta or Pico de Gallo
- Poached or fried egg for "avocado egg toast"
- Diced hard-boiled eggs
- Smoked salmon or lox
- An extra drizzle of extra virgin olive oil
- Fresh cilantro, fresh basil, or other herbs
- Everything bagel seasoning
How to Store Leftover Avocado and Roasted Tomato
Leftover mashed avocado should be refrigerated in an airtight container immediately. Try to leave as little space for air as possible in the container, this will help delay the avocado turning brown due to oxidation.
Leftover roasted tomatoes should be cooled completely before refrigerating. Store in an airtight container and refrigerate for up to 5 days.
How to Store Avocados in Water
For the record, it is not recommended to store whole avocados in water. You can store sliced avocado without the outer skin in water.
Place sliced or smashed avocado in an even layer in an airtight container, then cover with a thin layer of cold water, cover the container, and place in the refrigerator. Pat them dry with a paper towel before using.

How Long Do Avocados Last in the Fridge
Whole uncut avocados that are firm to the touch will stay fresh when stored in the fridge for up to 2 weeks. Storing them in the refrigerator will help to extend their shelf life. Once an avocado has been opened, it’s only good for a few days.
